Double Your Harvest By Eating Your Carrot Leaves
Because the carrots we get at the supermarket usually don’t have leaves on them (they keep for longer without the leaves) most of us have forgotten that the stems and leaves are part of the harvest. In fact they would once have been valued every bit as much as the roots! They taste like carrots, they are easy to cook with as you can use them in place of just about any other leafy veg, and they are packed full of healthy goodness. In addition to the usual vitamins you expect from carrots, the leaves have antioxidant properties and are quite high in potassium, an essential nutrient that helps with everything from nerve function to heart health, and can even help reduce wrinkles!
In this video I show you some of my favourite ways to use carrot leaves (often called carrot tops). These recipes are all either vegan or vegetarian, and they are all genuinely delicious and really quick and easy to make.
